Coralline seaweed offers many health benefits. It can help to lower blood pressure and cholesterol, build strong bones, is a natural soure of collagen. It is also loaded with nutrients such as fiber, vitamins and minerals. It also makes a great cold side dish as it is tasty and easy to prepare.
To prepare for cold side dish: Rinse with clean water and submerge in water for 4-8 hours for it to expand naturally. Drain the seaweed and use your hands to squeeze out excess water.
To make the dressing, combine rice vinegar, sesame oil, soy sauce, sugar, salt and ginger juice in a small bowl and whisk together.
Cut the seaweed into small pieces and mix well with dressing. Toss in some sesame seeds if preferred.
