This Shoyu is a koji fermented traditional brew of whole foods, made as it has been for hundreds of years. American organically grown whole soybeans and wheat are aged for two years allowing koji enzymes and patient tending to create this sublime Shoyu soy sauce. Shoyu enhances and harmonizes the flavors in food, imparts bouquet and disappears. It is the essential soy sauce.
Extraordinary fine shoyu made of Non-GMO organic soybeans and organic wheat by brew masters skilled in traditional methods. Aged in stainless steel vats for 2 years. It melds, brightens, and brings out depth of character in any food. George Ohsawa called this soy sauce 'tamari'. Shoyu soy sauce is macrobiotic 'tamari' soy sauce.
